XMPP

XMPP: east [swirly 'a'] sure [dot] im

The current de facto default encryption algorithm for XMPP is OMEMO.
XMPP also supports OTR, OpenPGP, etc.

Email

Email: east [swirly 'a'] east [dot] rip [gpg]

Email and encryption are incompatible; email is built using plain text protocols.
If you want real encryption, it’s required to encrypt email before it’s sent with encryption tools such as GPG.
You can read more about GPG on my blog or using articles in the ‘Resources’ section.
